If you’re looking to keep your healthy-eating lifestyle in check while also occasionally giving into those savory cravings, consider this collagen lover’s take on beloved hearty classic, tater tot nachos, and its corresponding buffalo sauce.

Tater Tot Nachos with Collagen Buffalo Sauce

Our recipe skips the sour cream and instead dresses cauliflower tater tots in a buffalo sauce that calls for Vital Proteins Collagen Peptides, apple cider vinegar, hot sauce and more ingredients you wouldn’t be surprised to already find in your kitchen. Of course, traditional tater tots, made from potatoes, work perfectly fine, but if you’re looking for a low-carb alternative, cauliflower can serve as your go-to base. Add even more flavor with cilantro, yellow bell peppers, shredded cheese and onions as toppings.

Tater Tot Nachos with Collagen Buffalo Sauce

Ingredients

  • 2 T ghee
  • 1 T coconut aminos
  • 1 t unfiltered apple cider vinegar
  • ¼ t onion powder
  • ½ t garlic powder
  • 1 C hot sauce
  • ¼ t cayenne pepper
  • 2 scoops Vital Proteins Collagen Peptides

Instructions

  1. In a saucepan, add all ingredients and whisk to combine over medium heat.
  2. Drizzle sauce over cauliflower tots.
  3. Garnish with your favorite toppings and enjoy!
