An Easy Meal with Tons of Flavor: Roasted Cauliflower Steak with Yogurt Tahini Sauce

Roasting vegetables is a delicious way to get nutrients in while maintaining loads of flavor. And with crunchy veggies, you need a good dipping sauce.

If you’re in a roasted broccoli rut, switch things up with cauliflower steak for a different taste but similar nutritional benefits. Cauliflower has a diverse profile of vitamins and minerals, including vitamins C, K and B6. Folate, potassium, manganese, magnesium and phosphorus make up some of its mineral profile. Cauliflower is full of fiber, which supports healthy digestion. It also contains high amounts of antioxidants, particularly glucosinolates that are found in cruciferous vegetables like broccoli and brussels sprouts.

Of course, roasted cauliflower and other vegetables are delicious on their own, but why not add a delectable dipping sauce to go with it? Use your favorite type of yogurt, whether its Greek, goat or even a dairy-free version. Yogurt provides a certain amount of tang from the fermentation process and provides beneficial bacteria from probiotics. Another ingredient used is tahini, which is made up of ground sesame seeds. Tahini provides a unique umami-type flavor (think: nutty with a hint of sesame) in the sauce.

For those who’ve never roasted cauliflower before, no fear! This recipe couldn’t be any simpler. All you need is an oven, a baking sheet, parchment paper and your favorite oil and spices to get started. 

Avocado oil is mild in flavor and is great to use when cooking or roasting at higher temperatures. This recipe also calls for garlic powder, salt and pepper, but feel free to add whatever spices you like to give this dish your own spin. Toss the cauliflower, which is thickly sliced, in the oil and spices to achieve an even coating as well as an even spread on the baking sheet. Work in batches if necessary if you prefer a crispier texture. Whisk the ingredients for the sauce together and let it sit while the cauliflower roasts. This allows the flavors to seamlessly meld together.

Roasted Cauliflower Steak with Yogurt Tahini Sauce

Roasted Cauliflower Ingredients

  • 1 head cauliflower, thickly sliced
  • 2 T avocado oil
  • 1 t garlic powder
  • ¼ t salt
  • ¼ t pepper

Yogurt Tahini Sauce Ingredients

  • ½ C yogurt, Greek or goat or vegan
  • 1 T lemon juice
  • 2 T tahini
  • 2 scoops Collagen Peptides
  • 2 t minced garlic
  • ¼ t salt
  • Paprika, to taste
  • Fresh parsley, for garnish 

Directions

  1. Preheat oven to 400 F. Toss cauliflower with avocado oil, garlic powder, salt and pepper and spread on a baking sheet lined with parchment paper.
  2.  Roast cauliflower for 30-40 minutes until golden brown and crisp.
  3. Mix together ingredients for the yogurt tahini sauce and top with fresh parsley. Set aside in the refrigerator until cauliflower is ready. Serve immediately.
