Quick Roasted Red Pepper Sauce with Collagen Peptides


You can never have enough easy weeknight meals ideas and this Quick Roasted Red Pepper sauce will be one to keep in your arsenal for years.  Great for any time of the year but particularly those cold nights when you want a warm meal but don’t want to spend time slaving over the stove.  Big flavors come from already roasted jarred peppers and just a bit of smoky paprika.  And our Collagen Peptides dissolve seamlessly into the sauce for a quick addition of filling protein.

Quick Roasted Red Pepper Sauce with Collagen Peptides

Yields: 4 servings, as a meal

1 large onion, chopped

1 T. avocado oil

1 12-oz jar roasted piquillo peppers, drained and sliced

3 garlic cloves, chopped

1 24-oz jar tomato sauce

4 sprigs fresh thyme, leaves removed

1 t. smoked paprika

4 scoops Vital Proteins Collagen Peptides

3 T. butter or ghee

sea salt & pepper, to taste


Add the chopped onion and avocado oil to a hot sauté pan. Cook over medium heat until onion is translucent and slightly browned, about 5 minutes.  Add the sliced piquillo peppers and chopped garlic to the pan and stir to warm through, about 1 minute.  Add the tomato sauce, thyme leaves,  smoked paprika, and Collagen Peptides and stir well.  Turn the heat to medium low and simmer uncovered for 10 minutes.  Turn the heat off, add the butter and stir gently as it melts.  Toss in spiralized veggies or cooked pasta and portion out.  Seasoned with sea salt and ground pepper, as desired.
