Lightly sweetened with just a hint of cinnamon, these Protein-Packed German Pancakes are a great way to start your day. Protein from both eggs and our Collagen Peptides give a rounded balanced of amino acids to keep you full. Top with your favorite toppings (we love it with berries and cream!) or enjoy it straight from the pan with a little melted ghee.
Protein-Packed German Pancakes
½ c. coconut milk
4 tbsp. coconut oil, divided
3 tbsp. maple syrup
2 tsp. vanilla extract
4 scoops Vital Proteins Collagen Peptides
¼ c. tapioca flour
¾ c. blanched almond flour
1 tsp. cinnamon
¼ tsp. sea salt
Fresh berries, for topping
Whipped coconut cream, for topping
Heat the oven to 350F. Add 2 tablespoons of coconut oil to a wide skillet (cast iron yields a great crispy bottom!) or baking dish. Place the pan in the oven while it preheats.
Add the eggs, coconut milk, 2 tablespoons of coconut oil, maple syrup, vanilla extract, Collagen Peptides, tapioca flour, almond flour, cinnamon, and sea salt to a blender (in the order listed so liquids are at the bottom). Blend on high speed for 60 seconds, or until the batter is smooth.
Remove the hot pan from the oven and pour the batter in. Immediately put the pan back into the oven and cook for 20-25 minutes, or until it has puffed up and a toothpick comes out clean from the center.
Serve warm with berries and whipped coconut cream, as desired.
