How does an Instagram influencer and fitness enthusiast kick off her morning? If you ask Carolina Suki Sicoli (@caro_suki), having pancakes for breakfast is a must.
After being diagnosed with celiac disease over 10 years ago, Sicoli has been living a clean lifestyle that excludes processed foods. She now enjoys a gluten-free, protein-rich diet. But this doesn’t mean she’s ditched her favorite meals. In fact, Sicoli still indulges in her homemade pancakes before taking on the day. The only difference? Caro Suki’s Collagen Whey Pancakes
Yields 1 Collagen Whey pancake
- 1 egg
- 2 egg whites
- 1 t vanilla extract
- 1 scoop Collagen Whey
- 1 T oat bran
- Splash of almond milk
- Dash of Himalayan salt
- Half a banana
- Scoop of almond butter
- Mix all the ingredients together to create the batter.
- Add the batter onto a skillet.
- Flip pancake when bubbles begin to form on top.
- Remove from skillet with spatula after pancake is fully cooked.
- Add toppings as desired.
