Cacao Maca Macaroons
Yields: about 16
1 c. dried dates
2 tbsp. coconut oil
2 c. unsweetened shredded coconut
¼ c. cacao nibs or mini dark chocolate chips
4 scoops Vital Proteins Collagen Peptides
¼ c. raw cacao powder
2 tbsp. raw or gelatinized maca powder
2 tsp. vanilla extract
½ tsp. sea salt
2-4 tbsp. filtered water
Add the dates, coconut oil, shredded coconut, cacao nibs, Collagen Peptides, cacao powder, maca powder, vanilla extract, and sea salt to the bowl of a large food processor. Process until the dates are broken up and the mixture is sticky.
Add the filtered water one tablespoon at a time until the mix smooths out a bit and resembles the consistency of thick cookie dough.
Using a large cookie scoop, drop the macaroons onto a lined sheet pan. Move the sheet pan to the refrigerator to chill for 30 minutes, or until firm. Keep chilled until serving.
